I have a 41 flathead 8 that has very high compression (175) and appears to have a hot cam (13 hg) at idle. I have heard some people say I should use 94's instead of the 97's I currently have mounted on the engine. I would appreciate any advice on this matter

If the posted picture is of your engine, you are running 3 Ford Holley 94s. Opinions are like assholes. Everybody has one. Alan

Only the center carb is connected, but they look good! Would 97's be better?

You may do better to ask these questions on the Ford Barn site. Many experienced hot rodders over there.
