When you remove the sleeves from a 1940 V8, what size bore do you end up with?

Assuming you are talking about a 1940 Ford 221 cu in. engine with standard 3 1/16" (3.0625") bore, the bore after you remove the sleeves (which have a wall thickness of 0.040") will be 3.0625 + 0.080" or 3.1425". Oversize pistons were available in a plus 0.083" size for use in an engine which had it's sleeves removed and was honed 0.003" to get a good wear surface.

Before you buy the pistons, have the machine shop do a sonic test to determine if the walls are thick enough to prevent cracking. Not all 1940 blocks could support the .083 oversize.
