I have a 1937 cast iron cylinder head that is uneven by approximately 0.001”. Since I have had some overheating problem I want to eliminate blow-by as a possible contributing factor by having the head resurfaced. Can anyone recommend a machine shop in the San Diego area that works on flatheads and can do this for me? My local shop never saw a flathead and would charge me extra for making a special holder for the head. Thanks!

I'd shop (no pun) for a different place. We do all kinds of heads and have never had to make a special holder. Our surfacer has adapters that are used to hold the head in place while the trolley that carries the stone moves across on tracks. This machine is used on all types of heads, old and new. I'd be reluctant to trust my work to a place without the equipment and experience. If your head was overheated, it should be checked for cracks or other damage before machining.
