What is the best way to prepare exhaust manifolds for show competition for the long term?

I suggest that you sandblast them and then use a cast iron gray paint from Eastwood or other suppliers of exhaust paint. I use a ceramic coating on mine , but I don't show my car.

John, I agree with Tom, a very light coat of high temp cast iron grey. Just know that they were not originally painted, so a light surface rust is acceptable, while an obviously painted manifold will likely cost some points. Alan

My local repair shop uses outdoor grill paint (semi gloss black) on sandblasted exhaust manifolds. Most hardware stores sell it and it seems to work great. May not be correct for show but it looks good and seems to stand up pretty well.
