Just purchased a 1949 Ford with a Flathaed V8 and 2 Strombergs. Does it matter which carburetor is the primary and also the manual choke is connected to both carburetors. Should the choke be only connected to one carb?

There is NO primary or secondary. They both work in unison. Choke can be used on 1 carb only (your choice) omo ken ct.

If I use the choke only on 1 carb. should I remove the butterfly on the other carb?

No reason to remove the butterfly.
