My truck is now 12 volt. Can the temp senders work (they are 6 volt) with a 12 volt feed?

You can use one "Runtz" transistorized voltage reducer on each electrical dash gauge except the Ammeter. These voltage reducers are available from many sources. One source is Randy Rundle of Fifth Avenue Antique Auto Parts, 785-632-3450.
